The first alcohol fermentation takes place in stainless steel tanks at a constant temperature of 18 ° C. Then the wine stabilizes and settles until spring, when the secondary fermentation in a bottle with the addition of yeast and subsequent maturation of at least 30 months in a cellar at a constant temperature of 12 to 15 ° C begin.
Villa Franciacorta was named after the town of Villa, in the municipality of Monticelli Brusati, which was restored thanks to the efforts of Alessandro Bianchi. He is considered the pioneer of winemaking Franchakorty. Starting his activity in the 60s of the last century, he organized a study of local soils to determine the characteristics of each site and, in accordance with the preferences of varieties, broke the vineyards. The winery is the passion of the Bianchi family and a monument to the ancient traditions of Franciacorta. Today, in their cellars with ideal conditions, in almost total silence and darkness, more than 1 000 000 bottles of exclusively Franciacorta DOCG vintage wines are stored. All of them are made only from the harvest of their own 37 hectares of vineyards. The company produces about 300 thousand bottles a year.
