In the manufacture of wine "Alazani Valley" the grapes is separated from combs, cooled to 4-6˚C, and then gently pressed in the pneumatic press. The wort is fermented in a stainless steel tank at a controlled temperature until the moment when it reaches the desired level of sweetness.
