Vaccaro dry white wine , "Bio" Catarratto-Zibibbo produced by biodynamic method from a blend of grapes varieties Catarrato and Zibibbo. The berries are grown in the municipality of Salaparut in vineyards with a south-eastern exposure at an altitude of 400 meters above sea level. Alluvial deep soils with a high content of organic substances. The yield of Katarrato is maintained at 9,000 kg / ha, Zibibbo - 7,000 kg / ha. Fermentation takes place in steel tankers at a controlled temperature of about 12-14 ° C and lasts 24 days.
The history of the Vaccaro winery began in the 70s of the last century, when Giacomo Vaccaro and his wife, Katerina, purchased a small farm in the municipality of Salaparut. This is a region in the southwestern part of Sicily, badly damaged by the earthquake of 1968. Here they decided to build their future and business based on endless love for a beautiful wounded land. In 1990, the project turned into a company called Vaccaro - a modern winery, equipped with the latest enology and inspired by the winemaking enthusiasm of the founders. The children of Giacomo and Katerina, Carmelo and Katia are also working at the winery, and the grandchildren, Luigi and Katerina, are preparing to join the family business soon. Vaccaro's estate stretched almost throughout the Belice River valley. The area of its own vineyards, which grow autochthonous and international varieties, and the crop is harvested only by hand, is 45 hectares.
The family history, its ambitions and roots, the mission, philosophy and values of the company are symbolically encoded in the brand logo. The basis of the composition is a shield, personifying the main support of the company and the family of Giacomo. He protects the winery and firmly holds in his arms all the members of the Vaccaro family. The diamond symbolizes the transparency of business, the purity of intentions, the diamond hardness of the principles and the strength of the bonds between the earth and man. At the same time, it is an allusion to Catherine, a loving mother and a respectable wife.
