"Txomin Etxaniz" - a classic white wine of the Basque Country, with a bright refreshing acidity, complex, long and rich taste fragrant bouquet with hints of minerals, citrus fruits, flowers, herbs. The wine is made from the autochthonous cultivated from the XIV century grapes - Ondarrabi Beltsa and Ondarrabi Suri grown to Chakoli de Getaria. The vineyards are planted on steep chalky soils of high slopes overlooking the Atlantic Ocean. After air compression in the inert gas atmosphere is performed in neutral wine fermentation tanks under controlled temperature and then aged wine lees for several months.
Txomin Etxaniz winery located in the heart of the Basque region Getaria. Many generations of the family Etxaniz engaged in viticulture and winemaking. In the old archives of 1649 preserved records of Domingo de Etxaniz, growers of Getaria. Tchomin Etxaniz owns 35 hectares of vineyards situated on the slopes. There are two kinds of farm grown autochthonous grapes: Ondarrabi Suri (90%) and Ondarrabi Beltsa (10%). The winery produces three white wine - "Tchomin Etxaniz", "Eugene" and "Uydi" (Late Harvest). Harvested in late September-early October by hand in 20-kg boxes. After vinification wine is traditionally aged on the lees.
