Wine "Altum" Merlot is made from grapes grown in the area №74 Kaperana vineyard with low yields, located on the complex rocky soil. Thanks to the fresh cool weather of spring and summer of 2011 vines, despite a small crop, reached optimal ripeness, the perfect balance between acidity and sweetness, good structure and received intense flavor and tannins. At the beginning of vinification should be a 5-7 day cold maceration, followed by 25-day fermentation on the skins at 28 ° C with three irrigations caps per day and malolactic fermentation in barrels. The wine is aged 15 months in French oak barrels (70% of which are new), before bottling is not filtered. Wine storage capacity is at least 10 years.
