Patriarch winery Simonsig - Frans Malan created his first wine Champenoise method in 1971. For many years he was the only winemaker in South Africa, creating exquisite sparkling wines of the finest and most delicate Chardonnay Cuvee, gradually reaching the highest quality level "Cap Classique".
For the manufacture of "Cuvee Royale" is used only the first juice, the most delicate pressing. The primary fermentation is carried out partly in old French oak barrels (38%) and in tanks (62%) to add richness and complexity of taste Chardonnay. Sugar and yeast are added special before undergoing a slow secondary fermentation in the bottle. Yeast magically transform sugar into billions of bubbles.
