For the manufacture of "Cuvee Royale" is used only the first juice, the most delicate pressing. The primary fermentation is carried out partly in old French oak barrels (38%) and in tanks (62%) to add richness and complexity of taste Chardonnay. Sugar and yeast are added special before undergoing a slow secondary fermentation in the bottle. Yeast magically transform sugar into billions of bubbles. The wine matures on the lees for a long 5 years. During this time, developing very thin, complex aromatic bouquet. Disgorging in small doses gives the wine a delicate fruitiness and finesse. After a five-year long-term exposure, "Cuvee Royale" reaches optimum maturity for the enjoyment of its taste. Also, the wine is capable of long-term storage, during which it will develop a greater depth of flavor and complexity.
Vintage "Cuvee Royale 2004" has won a number of awards at the highest international competitions. Among them:

Simonsig wine estate owner, located in the northwestern part of Stellenbosch, is family Malan. The estate noble grape varieties are cultivated and produced some of the best wines of South Africa.
