The grapes for the production of "Modus" grown in estates Poggio Casciano and Lodola Nuova, owned by Ruffino. In 2011, Merlot was collected in the last days of August, at the end of September - Cabernet Sauvignon, Sangiovese and matured to the beginning of October. Initial selection of grapes produced during the harvest, and then the berries have been added sorting using special tables. All varieties vinified separately. Alcoholic fermentation was carried out for ten days in temperature-controlled stainless steel vats, with an average temperature of 28 ° C. Postfermentativnaya maceration of the skin took two weeks. After completion of malolactic fermentation, the wine is blended and maturation at 12 months were placed in 225-liter barriques of French and American oak. Extract was made in barrels of 1st, 2nd and 3rd year of use. After a brief rest in concrete vats and bottled wine for an additional 6 months kept in a cellar of the winery.
Company "Ruffino" began its history in 1877, when the hereditary Tuscan winemakers and great patriots of their native land, cousins Hilario and Leopoldo Ruffino winery founded in the nearby town of Pontassieve to Florence. The winery Pian dell'Orino is located in the heart of the prestigious Montalcino region - Castelnuovo dell'Abate, next to the famous estate Biondi Santi.
