" Pueblo Viejo " Anejo is a traditional Mexican tequila with an exposure of 18 months. As a raw material, the manufacturer uses ripe blue agave fruits grown on their own plantations located on the fields of the Jalisco Highlands. Partially, agave is purchased from farmers - this way the company tries to support small business in the region. For the manufacture of tequila, fruits from plants aged 7 to 10 years are ideal. Juicy selected raw materials are baked for 48 hours at a temperature of 90 ° C, and then crushed and squeezed. Juice purified from fibers is diluted with pure spring water and fermented in fermentation tanks for 72 hours. The process is accelerated by the addition of specially selected and wild yeast. Fermented juice undergoes two-phase condensation at a very low temperature, and then aged in American white oak barrels.
Tequila "Pueblo Viejo" Añejo has won two gold medals at the contest "China Wine and Spirits Awards" and a silver trophy in the "San Francisco World Spirits Competition".
The story of Casa San Matias began in 1886 when don Delfino González decided to bring his passion for tequila making to life. In 1940, the company moved to Ojo de Agua in the Los Altos de Jalisco region, a stronghold of the traditions and culture of tequila. Over time, the range of the plant expanded and after a few years, the masters of Casa San Matias were able to offer customers mature variations of Viejo and Gran Reserva.
Successfully overcoming obstacles to development, the Mexican company has been leading the national market for many decades, supplying products for export. The company’s team consists of experienced distillation masters, who are almost one big family, so Casa San Matias tequila is not just a drink of industrial production, but the quintessence of family experience and love for one’s business.
