The wine has a dark ruby color with purple reflections.
The wine seduces a generous, rounded, silky taste with fruit and berry hues, fine-grained tannins and pleasant woody-spicy nuances in a long aftertaste.
The wine shows a complex, rich aroma woven from notes of blackcurrant, cherry, plum, licorice, sage and wood.
The wine is preferably served with red meat, game and hard cheeses.
"Tolmer" is a charming dry red wine created from selected Cabernet Sauvignon grapes, which grows in excellent climatic conditions. Thanks to the cool climate, the berries ripen slowly, saturated with aroma and color. Harvesting is carried out only when the fruits reach optimal maturity. At the winery, grapes are fermented in stainless steel tanks at a controlled temperature. Wine is aged in French oak barrels, 60% of which are new, for 12 months.
Penley Estate was born from the union of two innovative wine families in South Australia - Penfold and Tolly. Property owned by the Tolly family was founded by Eng, Beck and Kim Tolly. They bought a plot of land in Kunavorra in 1988 and planted it with Cabernet Sauvignon grapes, thus laying the foundation for the future company. The winery was built in 1995. One of the key features of the company are its vineyards, planted on the soils of "Terra Rossa", which maximally reflect the terroir of the region.
Today, the company has grown significantly in size and includes a modern winery surrounded by 200 acres of vineyards. In tandem with winemaker Kate Goodman, the company creates in Kunavorra a new, softer and more elegant style that was not previously inherent in this region. Today, the Penley Estate is one of the most progressive wineries and the top producer in the region.
