Dry red wine "Señorío de Uñuela" Crianza is made from Tempranillo grapes. The harvest is collected from special sites located in №2 area reserved for the cultivation of grapes to create red wines. These vineyards are located at an altitude of 490-550 meters above sea level. vineyard soils consist mainly of clay and alluvial inclusions close to the surface. This diversity of soil composition in combination with the climate produces wines with great complexity of the fruit, which reflects the characteristics of the region. Tempranillo is collected in small baskets when berries reach optimum phenolic maturity stage. Maceration and fermentation take place at a temperature not exceeding 25 ° C. This mode helps to maximize the extraction of tannins and pigment substances, but retains a clean fruity fragrance of the future wine. After malolactic fermentation the wine becomes smoother. It is placed in American oak barrels for 12-month exposure. Ripening gives the wine a pronounced saturation, structure and depth of flavor and adds a bunch of a whole range of wood shades. Before the sale of bottled wine is held semi-annual "holiday" and stabilization in the cellar at low temperature.

The cooperative is often a necessity for many small wine producers in rural areas who are unable to survive alone. That's collective spirit and cohesion can have a huge impact on the entire industry.
