Paolo Leo, Chardonnay is a semi-dry white wine made from Chardonnay grapes grown in Apulia, in the Salento area, in the province of Brindisi. Harvesting is carried out at dawn to preserve the freshness of the berries. After grinding, soft pressing, static wort clarification and fermentation follow. The fermentation process at a temperature of 15 ° C lasts 10 days. After fermentation, the wine is aged in stainless steel tanks for 4 months and one month in bottles.
The history of winemaking began in the late 19th century, when Antonio Leo decided to start making wine. At his disposal was the estate of Masseria Monticello and 20 hectares of vineyards. In the 1920s, the grandson of Antonio, Paolo, inherited family properties and built a small factory in the town of San Donaci. Since then, the history of Paolo Leo has begun.
The vineyards of the company use organic methods of vine cultivation, each stage of production is strictly controlled.
