Elegant, harmonious and lively wine with well-balanced fruit flavors, soft tannins ripe, velvety texture, good acidity and a long finish with hints of sustainable minerals and land.
Intense, complex and fresh aroma of the wine reveals notes of ripe fruit (cherry, rose, plum and fig) and violet followed by elegant spicy shades (white pepper, tobacco, vanilla) and the subtle nuances of toast. The final touch are the notes of balsamic and cedar.
The wine goes well with grilled rack of lamb, grilled red meat, roast duck, cheeses, rabbit and game (wild boar).
The grapes for the production of three types of Pago de Cirsus, "Cuvee Especial" is harvested by hand in small boxes of 15 kg. Cold maceration in stainless steel tanks for several hours carried out separately for each class. Followed by fermentation and aging in new French oak barrels for 12 months. After bottling cuvée matures another 12 months. Vintage 2007 is recommended to use until 2018.
Winery Pago de Cirsus, located close to the village of Ablitas in southern Navarre, is a private estate of Spanish filmmaker Iñaki Nuñez. The winery was purchased in 2000 and completely renovated in the year 2002 with the aim of creating a reserve of high quality wines. Vineyards farms occupy an area of 137 hectares. Here are cultivated varieties such as Tempranillo, Syrah, Cabernet Sauvignon, Merlot, Chardonnay and a small amount of vines Muscat. The average yield per hectare is limited to 4000-4500 kg, resulting in grapes of excellent quality, which yields a rich, elegant wine with a powerful structure.
Since 2003, the chief winemaker of the estate is one of the most famous French oenologist from Bordeaux - Jean-Marc Sabu, formerly winemaker at Château Haut-Brion (one of the top 10 wineries in the world). According to the magazine "Decanter", winery Pago de Sirsus repeatedly been included in the list of 100 best wineries of the world, and its wines have received more than 30 gold medals at prestigious international wine competitions.
