Sparkling wine Mont Marcal, Cava Brut Reserva is made from several grape varieties, which are collected and fermented separately. Harvesting takes place by machine. Peeled fruit stems berries cooled to 12ºC and sent by pneumatic press. Later the must is cleared of primary sludge and fermented for 12 days at a temperature of 14-16ºC. Upon completion of the fermentation wort is withdrawn from the sediment, is blended passes purification, stabilization and filtration.
