Distillation is carried out only after the completion of fermentation, which, according to the rules for the preparation of cognac spirits, occurs no later than March 31. The process of aging follows the process of double distillation by the Charente method of double heating. Exposure is carried out in barrels of Limousin oak for 3 years.
