Dessert wine "Recioto" degli Angeli della Valpolicella Classico is made from grapes Corvina, Rondinella and Molinara, grown in vineyards Masi in the communes of Marano, Negrar and San Ambrogio in the historical district Valpolicella Classico. Wine is produced by applying the technique "appassimento" (drying grapes), which resulted in loose berries approximately 30-40% of their weight, and they greatly increases the concentration of sugar and flavor. To make the structure of the wine variety Corwin goes through the process "botritizatsii" (the appearance of "noble" rot). After drying the berries are separated from the ridges and gently pressed. Fermentation is carried out at low ambient temperatures in large barrels of Slavonian oak for 35 days. Wine is aged for 12 months in oak barrels and at least 3 months in bottles in the cellar of the winery. The wine has excellent potential storage: during the first 5 years saved sweetish fruit notes, with further aging wine taste fades, revealing a mature, sophisticated fragrance of spices but, when exposed wine gets 15-18 years aroma characteristic of the port.
Masi family winery located in the region of Veneto Valpolicella in the east, is a dynamic and innovative company. The name of the winery takes its name from the first vineyard "Vaio dei Masi" - "Little Valley Ointments" acquired Boskaini family in 1772. The total area of vineyards Masi is 160 ha 17 vineyards located in the classic Valpolicella zone and 8 vineyards in Bardolino and Soave.
