Wine "Organistrum", named after the ancient musical string instrument, made from grapes Albariño, grown in the southwest region of Rias Baixas at an altitude of 110 meters above sea level. The grapes from this area usually ripens earlier than the rest of the region. Upon completion of primary fermentation, the wine "Organistrum" placed in French Allier oak barrels of 300, 400 and 500 liters, which hosts a secondary malolactic fermentation for 3-4 months. Kept the wine in stainless steel tanks for 8 months.
