Antinori family is engaged in winemaking in 1385 and is one of the oldest wine honorable Association of Families. Today the House is managed by the Antinori 26th generation of the family. Production of Vinsanto in Tuscany began in the Middle Ages: it is considered a true representative of regional cuisine. However, Antinori began to produce it only in 1987. Grapes, which is taken exclusively from the estate in Chianti Classico, are carefully selected and sorted by a different harvest time. Grapes, the first shot has a higher acidity, later has a higher sugar content, which provides the right balance between sugar and acidity at the end of vinification.
