At the initial stage of sherry was maintained and developed under the veil, and then subjected to oxidative aging. Barrels filled not fully to allow wine in contact with air to create a surface "flor" (Spanish for "flower") - a yeast film. Under such a film sherry kept for several years, so he has a particular flavor. Then sherry kept in American oak barrels for the traditional system of "solera".
