Lupe-Cholet, Chassagne-Montrachet AOC is an exquisite white dry wine made from Chardonnay grapes grown in the company's vineyards. The crop is harvested when the berries reach the optimum level of ripeness exclusively by hand. The berries are carefully supplied to the winery, where they are carefully sorted on the triage line and gently pressed. This is followed by a deburbage, which allows you to remove the largest sediment particles. Fermentation takes place in vats of Allier, Tronse and Vosges oak tanks on the draft with baton. Alcoholic fermentation is carried out at a strictly controlled temperature using our own yeast for several weeks. The wine is aged in oak barrels from 14 to 16 months.
