Red wine from Chambol-Musigny is often considered the most "feminine" wine of Côte de Nuits; its intensity and delicacy express themselves with elegance and subtlety. That is what Jaffelin, Chambolle-Musigny , which unites in its taste a beautiful firm structure and tenderness. For the aroma of Chambol-Musigny are characteristic shades of dark purple and red berries, especially strawberries and raspberries. After a long storage in the aroma of wine, spicy notes of ripe fruit and prunes, truffle and underwood shades may appear. Acidity is always moderate, and tannins are silky smooth.
Grapes for the creation of the Jafflian, Chambol-Musigny are collected and sorted by hand. Maceration lasts about 3 weeks. Then the wine is aged from 16 to 18 months in French oak barrels, about 40% are new barrels.

The history of the Jaffelin wine house is 8 centuries old. The new head of the development of the house of the Jafflians, the smallest of the big houses in Burgundy, began in 2004 with a fully restored winery equipped with the most accurate tools. Zhafflyan is the only company whose production of wines has not gone beyond the "heart" of Burgundy - the city of Bonn. Today, like eight centuries ago, the company is located in the Chapter, the old monastic house of the Collegiate Church of Notre-Dame de Bon. Several hundred barrels lie under the stone arches, built 800 years ago in the Gallo-Roman rocks. This place, while cool and moist, is ideal for holding barrels of wine.
