Champagne pale gold color with fine bubbles.
Champagne has a buttery, full, rounded, well-balanced taste with a touch of minerality and a long harmonious finish.
Rich and complex, very elegant champagne flavor combines the delicacy and minerality.
Champagne perfect as an aperitif, goes well with oysters, light seafood dishes, cream soups and dishes of sea fish.

2000 remembered very high average temperatures - the highest figure since 1956. The winter was mild and dry without snow. In the spring there were no morning frost that could damage the vines, but the rain held several times with heavy hail. The flowering took place under the hot June sun, which changed the long rains almost the whole of July. August was hotter, but still with a constant barrage of rainy. A large number of vines turned yellow, was a high presence of mildew and botrytis risk of infection. In late August, the weather improved and continued to delight throughout September. This allowed the grapes to reach the desired size, and winemakers to collect it in sunny weather. Thanks very scrupulous respect to the methods of viticulture crop ripened under optimal conditions.
