Wine "Les Enseignieres" was derived from crop c two vineyards located in Puligny-Montrachet, 30 broken 80 years ago. Assembled with these grapes of Chardonnay immediately put pressure on the pneumatic press. The resulting juice is placed in oak barrels for a strictly controlled alcoholic fermentation, through which extracted from the berries of a maximum aromatics. Malolactic fermentation is carried out to mitigate the natural acidity, after which the wine is aged in oak barrels. The number of new barrels and duration of exposure is determined each year based on the results of tastings. A small proportion of new barrels can demonstrate a clear manifestation of mineral and maintain lightness characteristic of the great wines of Puligny-Montrachet. On average, the proportion of new barrels is 20% and the duration of ripening - 15-18 months. Then the wine is decanted, subjected to pasting (and for each barrel chosen your method) and lightly filtered before bottling to give it shine and cleanliness.
His farm hereditary winemaker Henri Prud'hon acquired in 1945 after his marriage, received it as a wedding gift. At the time harvest in the form of it must sell large wine merchants in the region. Currently Domain Henri Prud'hon e Fiss is managed by two sons Gerard Proudhon: Vincent and Philip. They continue the work started by his father and grandfather, mastering new markets and increasing production. Annual output of 90,000 bottles, of which 85% is exported.
