Vineyard "Clos de la Roche" is located in the north of the commune Morey-Saint-Denis and became famous for his Druid rocks. From the famous "Latricieres-Chambertin" it takes only a small premium Cru "Les Combottes". Maybe if it were not for this fact, Clos de la Roche attributed to a family of "Chambertin" Grand Cru, as to have all the prerequisites: the same altitude (270-300 meters), the same composition of the soil (Bajocian limestone half with clay). However, the rock still did their job, and it turned out quite another wine that has no harsh inherent Shambertenu, on the contrary, are the original notes of truffle and blueberries. The word "Claw" indicates that the vineyards on all sides surrounded by a stone wall, which is an additional guarantee of high quality wines.
After the harvest and the separation of 80% berries from the crests of the vinification process begins flowing into 3 stages:
- Maceration, which lasts from 3 to 5 days;
- Fermentation, in which process the wort for 3-4 days into wine, and then for a further 4-5 days extracted anthocyanins and tannins;
- Excerpt of wine is carried out in oak barrels capacity 228 liters (50% - new) for 18 months, during which the wine is decanted from the precipitate twice.
George holds Lignier butilizatsiyu wine on the estate.
Wine "Clos de la Roche" has an excellent storage potential - from 10 to 25 years.
Winery Georges Lignier e Fiss, the history of which started in the mid-nineteenth century, belongs to the family for several generations Lignier. Currently managing the affairs Lignier George and his nephew Benedict Lignier Stehli, who spends all his time in the vineyards, winery and cellars. Georges Lignier - winemaker with 30 years of experience, creates delicious, distinct, elegant wines. His nephew graduated from the Wine School in Beaune, received National Diploma oenology (NCE).
The farm owns vineyards with a total area of 15 hectares, bred in 8 appellation. Most of the vines planted more than 80 years ago. Wines from Georges Lignier et Fils, produced by traditional technologies and aged for a long time - 18 to 22 months - in oak barrels, have a rich taste and superb flavor.
