"Estancia Raicilla" is the original Mexican mezcal made by double distillation of fermented Maximiliana agave juice. The word "mezcal" comes from the language of the Nahuatl Indians: "melt" means "agave" and "ixcalli" means "cooking". Thus, mezcal means "cooked agave." The distillation process begins with baking the agave in special ovens, which are conical pits lined with stones. Agave is placed in a furnace with charcoal, covered with palm leaves, covered with earth and left for 2 days. Then the agave is crushed and the resulting juice is fermented with natural yeast. The product is then subjected to double distillation in copper stills.
R&J Estancia Distillery owns two distilleries in La Estancia de Landeros (Jalisco). Distilled rainwater is used to reduce the strength.
Agave varieties Maximiliana are grown at an altitude of more than 1000 meters above sea level under the influence of direct sunlight. The soils of the area are characterized by the presence of red and yellow clay with a small layer of sand, which is useful for drainage of groundwater and storm water, as well as an ideal soil pH (between 6.0 - 7.0).
