During the second distillation, local fruits and spices, such as pineapples, bananas, oranges, anise, etc., are added to the future mezcal. The turkey brisket is suspended above the drink. The family company Casa Cortes has been leading the history since 1840, when Miguel Cortes became a master distiller and made his first batch of mescal. He grew blue agave bushes on his plot, and to bake her cores with his own hands, he built a small oven made of clay and stones. His great-grandchildren, José and Miguel, replaced the clay pot for distillation with copper alambic. Now at the head of Casa Cortes is Valentin Cortez, under his leadership, 13 mescalero families have united. They continue the traditions of their ancestors, making the mezcal of Oaxaca not only a commercially successful product, but also a symbol of local culture, family values and a long history.
