The taste of wine is rich, powerful, plentiful, bold, sweet, with extremely bright tones of lemon and candied fruit, enveloping texture and a long, persistent aftertaste.
The warm, explosive aroma of the wine is filled with tones of sweet garden and citrus fruits, deep mineral notes, nuances of hay and chamomile.
The wine goes well with pasta, vegetables, fish, white meat and any cheeses.
"Versante Nord" Uve Bianche - rich, powerful wine with a young and bold soul, similar to the soul of the winemaker who created it. It is a deeply territorial mixture of Etna’s grape varieties coming from 6 different sites located on the north side of the volcano. Therefore, the wine was called "North Side". In the manufacture of wine, five-day maceration on the skin is used, which helps to preserve the typical features of the volcanic terroir: minerality and infinite complexity. Spontaneous fermentation with natural yeast cultures without temperature control takes place in concrete tanks. For aging for 8 months, oak botti of various sizes are used.
Eduardo Torres Acosta was born on the island of Tenerife and in childhood helped his father cultivate a small family vineyard. In Italy, he studied the field of oenology and viticulture, after which in 2012 he went to Sri Lankan to harvest Ariana Okkipinti, and worked for four years at Passopisharo's farm as an oenologist. In parallel with this, he managed to rent small plots of land (a total of 2 hectares) with old vineyards located on the northern slope of Etna at different heights (between 600 and 800 meters above sea level) and on various types of soil, mainly formed by volcanic ash and rich in stones. His approach, both in the vineyard and in the cellar, is to intervene as little as possible in order to get wines, which are a true mirror of the impenetrable and wonderful territory of Etna. The use of sulfur dioxide is carried out only in case of emergency. Bottling takes place in accordance with the phases of the moon.
