Dopf about Moulin became the first who began to produce sparkling wines in Alsace. All this happened thanks to Julien Dopfu who is constantly in search of new ideas and information. In 1900 he came to the exhibition in Paris, where he was told about the method of making champagne. It is interested in, and he spent two years of his life in Epernay, where he studied how to make the best champagne. The knowledge gained and he used in creating the Alsatian sparkling wines. This experiment was a success. Everything was perfect: the favorable climate, rich soil and natural Sparkling Pinot Blanc. In addition, Julien invented for his bottle of wine a special form (a bit elongated and stretched), which to this day distinguishes Alsace wine from others. First, his invention met with a wave of incomprehension conservatives. However, after the successful demonstration of the uniqueness of his invention, Julien was awarded a silver medal with the inscription "For particularly successful achievement." Since 1972, issued a decree that all wines produced in Alsace, should be bottled such form.
Now the family maintains strict ethics in their work, which is why they produce their wines from the best grapes according to traditional methods, but do not forget about the modern technical devices. Dopf vineyards of Moulin occupy more than 70 hectares and is located near the town of Riquewihr on the southern slopes of Mount Schoenenbourg. Dream family Dopf realized only after eleven generations: they built their own wine business, which has become one of the most successful in Alsace.
