Wine rich ruby color.
Balanced, very smooth, refreshing taste of the wine has a good level of acidity, tannin structure flexible, beautiful notes of berries.
In a fragrant bouquet of wine is dominated by tones of fresh red berries - cherries, strawberries, juicy land nuances.
The wine goes well with meat dishes, especially - with the stew, as well as with grilled salmon and mushrooms.
After harvest Pinot Noir goes immediately to the winery and pressed. Fermentation is performed with a gradual increase in temperature, which contributes to a more intensive circulation of the wort. Fermentation lasts 8-10 days, during which must under strict thermal control overflows from the barrel into the barrel twice a day. After blending, the wine is aged in half stainless steel tanks, the other half - in French oak barrels. Bottling wine produced in July. Wine storage capacity of at least 5-6 years.
Domaine des Vercheres - family winery, located in the northern region of Macon, south of Côte Shalonez. Recently domain owner Andre Dupuis changed his sons - Remy and Jean-Christophe. Domaine de Vercherin owns 20 hectares of vineyards located in the municipalities of Muncie and Ruayer. Long time domain grew only Chardonnay, which in this area early warms lands south-eastern slopes gives a mellow, bountiful harvest with good minerality. Today, the family grows Dupuis also Pinot Noir, from which creates a gorgeous red wine. Both soil vineyards consist of a mixture of clay and limestone and covered with small white stones. In one section of the deep and cool clay subsoil slow down the ripening of the grapes and contribute to the development of complex fruit and citrus flavors. At another location the roots of vines go deep into the limestone, saturating berries minerality. Exceptional quality wines Domain de Vercherin is the result of blending grapes from two sites. For the treatment of vines Dupuis family uses a pruning "Guyot", more common in the Côte d'Or, but not in Macon. Using this method, which are left on the vine just fruiting branches, reduced yield and harvest with more concentrated fruit flavors. Most recently, for erosion control on steep slopes and conservation of soil health Dupuis sons planted grass in every second row of vines, and others put the straw.
