Sancerre wine produced from grapes Sauvignon Blanc, collected manually from three different terroirs and the last partial cold maceration. The wort is fermented in oak barrels for two years of natural yeast. Before bottling the wine matured on the lees for six months. In 1970, Tom and his son Michel Laurent received the property from his father's domain, he founded in 1946. Named for the current owners, Michelle Domain Tom e Fiss today has at its disposal 40 sites that are located on the sunny slopes of the four villages in the region of Sancerre. The area occupies 17 hectares of vineyards: more than half took Sauvignon grapes, and the rest of the grown mainly Pinot Noir. Grape vines grow on three types of soil: stony limestone, clay-limestone and stone-siliceous.
