Wine Sancerre "Thauvenay" created from grapes Sauvignon Blanc grown in the vineyard area of 2.8 hectares, has a southeastern exposure, located near the town of Tovene. The soil of the vineyard - a very hard limestone and silicic rock. Several times during the year it loose, weed and fed only organic fertilizers. All interventions in the vineyard ecosystem are minimized, in order to protect soil and fauna that are valuable assistants harmonious development and maturation of the grapes.
Sancerre Blanc "Tovene" has a rich and complex structure and strong character of the Sauvignon. Wine production takes place according to the conventional technique using a pneumatic press and lees cooled wort. Malolactic fermentation replaced with a slow shutter speed in stainless steel tanks. Sancerre "Thauvenay" capable of development in the bottle for 3-5 years, but all of his excellent qualities demonstrates the first 2 years after the spill. Total production - from 18 to 22 thousand bottles depending on the vintage.
