Wine "Volnay-Santenots" Premier Cru from Domaine Jacques Prieur is made from grapes grown in Volnay appellasone in Meursault. The vineyard covers an area of 0.56 hectares, grown Chardonnay for white wines and Pinot Noir, from which the wonderful cuvée "Volne Santa." This terroir, lit by sunlight from morning to evening, produces charming wine with a bouquet of luxury and noble tannins.
After the early winter of 2011 came warm and dry spring, which led to the rapid recovery of the vines. Flowering occurred three weeks earlier than usual. Dry and hot weather led to intense fruit ripening, but a fundamental change in the weather since July 14, gave hope for a good harvest. Warm weather held in August and early September, during the harvest.
For the production of wine "Volne Santa" Premiers Crus grapes are harvested by hand, then manually berries are moving and are separated from the ridges. Fermentation lasts about 21 days in open wooden vats at a controlled temperature. During the active phase of the alcoholic fermentation of wort 2 times per day mixed. The wine undergoes a secondary malolactic fermentation. Wine is aged for 19 months in new oak barrels, then bottled in traditional Burgundy bottle type "sommelier". The wine can be stored for 6-7 years after bottling.

Martin Priёr determines the winery philosophy as follows: "... The quality of wine depends largely on the quality of grapes: only ripe and healthy berries can have a truly great wine. ... Last time we practice a method called" viticulture raisonnee "(reasonable viticulture) which, in conjunction with the biodynamic method has allowed us to achieve an optimal balance between the produced wines and grapes are grown.
