In the production of red wine "Chateau La Mongie" use local grape varieties - Cabernet Sauvignon, Cabernet Franc and Merlot blended dominant. After harvesting the berries are sorted, subjected to destemming and light compression. Fermentation occurs in crop stainless steel vats at a controlled temperature. The wine is then moved into the tank, where for some time maintained prior to filtration and bottling. This keeps alive the vinification fruity wine.
