The harvest for making wine is made mechanically late at night and early in the morning. Sorting grapes is carried out even in the vineyard. After slow, gentle pressing, the resulting grape juice is left to stand at low temperatures for 48 hours. Fermentation takes place in thermoregulated stainless steel tanks for 20 days. Maturation on a thin sediment lasts 4 months.

Chateau La Martinette was founded almost 400 years ago - in 1620, it is considered one of the oldest wineries of the commune of Lorg, and also the "pioneer" of viticulture in Var district. Today, Château La Martinet takes a second wind under the leadership of the Russian Alexei Dmitriev. Located in the central part of the Var department, it has an excellent potential due to its natural location. The vineyards are surrounded by forests rich in game, meadows with fragrant grasses and the full-flowing river Arzhan. The goal of the new master was "the revival of the original nature and magic of this unique place, its orientation towards the future, without damaging or distorting its nature, without violating local traditions . " The property of Dmitriev also houses the neighboring farmstead of Prieure Saint Marie Vieille and its vineyards.
The vineyards of the Château La Martinett by 2012 were in a very poor condition. Most of them could not be restored, and it was decided to uproot the old vines and plant new ones. All this is planned to be done not immediately, but in several stages. In addition, papers are submitted for permission to build a new wine cellar that can contain wine from future crops. With the support of experienced specialists and eminent consultants, not only the gradual revival of the vineyards, but also the production of wines from the harvest from the remaining vineyards. In general, the program to revive the Château La Martinetta is scheduled to be completed by 2021.
