Rum "Bayou" Reserve is made by distilling sugar cane juice Louisiana in copper pot stills followed by aging in American oak barrels of bourbon for three years by Solera method. The barrels are laid out on top of each other so that a vertical pyramid is formed from them. The oldest barrels are laid down on the ground. When bottling, the oldest barrel is opened first. After it is completely emptied, rum is poured into it from the next old barrel and is treated in the same way with all the other barrels, and so on, until the topmost barrel remains empty. It is filled with fresh rum. The drink is bottled manually.
