Barolo wine "ornata" produced every year, but only during exceptional vintages and in limited quantities. Yields are from three small vineyards in the commune of Serralunga d'Alba, owned by Pio Cesare, who are among the best. Maceration and fermentation occur in stainless steel tanks under constant temperature control for 15 days. Then the wine is kept 36 months in new barrels made of French oak of medium roast (partly in barriques - 70%, partly in barrels of 25 hl). Storage capacity Barolo "ornata" is not less than 30 years.
Pio Cesare winery was founded in 1881. Before that, there were stables, dating back to the Middle Ages, so in its territory felt the breath of history, you can see the ruins of ancient Roman buildings and defensive walls.
