Aldo Viola, "Krimiso" Catarratto, Terre Siciliane IGT - the so-called orange wine, refined, with a bold character, representing the famous wine region - Sicily. The grapes for its creation are grown according to the principles of organic farming, and the wine itself is produced according to the concepts of biodynamics. Harmonious and at the same time complex, rich and fresh wine is created from the Catarratto variety, grown on soils rich in limestone and clay. The plots are owned by the Aldo Viola farm, which means they are subject to the complete control of the manufacturer. The grapes are harvested by hand, sorted, gently distilled and left to ferment and macerate on the skins in steel tanks. The process lasts 5 months, after which the wine is bottled without filtration and with minimal addition of sulfites.

The Aldo Viola brand is sometimes referred to as "one actor's winery", emphasizing the key role of the ideological mastermind of the entire enterprise - Aldo Viola. It is worth noting that winemaking was Aldo's family business decades ago, keeping traditions and knowledge for four generations. Young and ambitious, Aldo first gained knowledge and experience in Europe, after which he returned with a firm intention to create the perfect local wines using ancient technologies. In his work, he relies on three principles: "excellence", "traditions", "ecological cleanliness".
The vineyards belonging to the Waldo family stretch over an area of about 16 hectares in the famous Sicilian region of Trapani. Nero d'Avola, Syrah, Grillo, Catarratto, Nerello Macalese and Perricone are grown here.
Each variety is bred in accordance with the principles of environmental sustainability, and the processes meet the criteria for organic farming. Fermentation takes place with local yeast, while malolactic fermentation takes place naturally. Sulphites are practically not used, and during bottling, filtration is not carried out, thus all the naturalness of each type is preserved.
