Irish whiskey is a strong spirit distilled, aged and bottled in Ireland. The main difference between Scotch and Irish Whiskey is the absence of peat taste and aroma in the latter. Barley is dried without using the peat smoke, so the taste of the drink is more refined and elegant.

More info

Scotland and Ireland are closely situated and have more similarities than differences. No wonder that the whiskey is made by a similar technology, although there are small specifics. For example, in Ireland not only barley malt is used, but also unmalted barley and other grains. Triple distillation (if to compare to double Scottish) gives the drink a special purity and strength. Form of stills is more rounded, and cubes themselves are larger than the Scottish. All these factors provide the identity of Irish whiskey.

Classification of whiskey:

Single malt — single malt whiskey, made solely on the basis of malted barley. This category includes such brands as Connemara, Knappogue, Tyrconnel.

Pure Pot Still Whiskey — whiskey made from unmalted barley with the addition of other grains (rye, wheat, corn). Until recent decades, here only this kind of whiskey was made, today the bright representatives are only Redbreast and Green Spot.

Blended — Blended Irish Whiskey, made up of a mixture of single malt and grain varieties. Here certainly should be mentioned such brands as Jameson, Bushmills and Tullamore Dew.

It is noteworthy that all the brands of Irish whiskey are produced only by three major companies: New Midleton Distillery, Old Bushmills Distillery, Cooley Distillery.

In recent years the popularity of Irish whiskey has increased. Throughout the XX century it was undeservedly forgotten due to various political problems in the country. Meanwhile, the history of Irish whiskey dates back to the XII century, and during this time the master of distillation have learned to do their job. Irish whiskey is made in three large distilleries: Old Bushmills Distillery on the north of the country, Cooley Distillery in the north-western edge of the island, New Midleton Distillery in the southern part of the island.

Just as in Scotland, here single malt whiskey and blended whiskey is produced. However, in Ireland cereals are widely used — rye, corn and wheat. When drying peat smoke is not used, so the Irish whiskey has no smoke flavor.
