Unusual method of vinification wine "Pian del Masso": part of the traditional grape passes for red varieties fermentation maceration at controlled temperature for 10 days and frequent pumping of the must in order to ensure a smoother taste and fragrant aroma. Another, smaller part of the grape vines taken from a "overripe" state, is placed in the fermenters that already have almost finished wine. Fermentation is resumed and the result is a very slow and steady fermentation, which gives the "rich", structured and very complex product that can be stored for a long time.
Melini wine house was founded in 1705 on the outskirts of Florence, in the village of Pontassieve. Melini wine immediately became famous for their high quality, but until the middle of the XIX century they were delivered only to the domestic market, while in 1865, Alfredo Laborel Melini has not created a woven straw wafer bottle, allowing safe transport of wine abroad.
